Here's something I really like I pour it over my cornbread, and dip my deepfried shrimp in it.
Shrimp Ettouffe
Makes: 4 servings Prep Time: 15 minutes Cook Time: 1 hour, 0 minutes Ready In: 1 hour, 15 minutes Ingredients 2 pounds Medium Shrimp(shelled and deveined) 1 medium onion 1 bunch scallions (green onions) 1 small bunch of Parsley 1 can tomato paste 2 tbsp cooking oil 2 cups water salt and cayenne pepper to taste Directions Dice the onions and scallions. Chop the parsley. You can mix the onions and scallions in the same dish. Hold the parsley separately In a medium pot, add 2 tablespoons of cooking oil (your choice) Once the oil is heated, add the onions and scallions. Glaze the onions and scallions.
Once all are glazed, add 2 cups of water and the can of tomato paste. Stir until the paste is dissolved. Lower the heat to a constant simmer for 35-40 minutes. Stir occasionally and add water if needed. Add seasoning to taste. (salt and a little cayenne pepper)
After simmering, add parsley and simmer for 15 minutes. Add shrimp and lower the heat for an additional 20 minutes. If the sauce looks to watery, you can dissolve 2 tablespoons of flour in a little water to a pasty continence and slowly stir in. Serve over rice and/or corn bread

I recently had Crawfish Ettouffe at a Cajun restaurant in NC, where I went to see Clay McClinton. On the way in there was a couple coming out and I asked about the food. They just happened to be from Louisiana and said it was better than most they ate at home. I'm not suppose to eat spicy foods, but wanted to have something different so that is what I tried along with some gator bites. I had gator once and loved it but these were like hush puppy bites and totally different. I questioned the chef at length about the spices and heat index, later realizing that since he ate it all the time, he was the wrong person to ask. It was very good but not for my acid reflux.

I love spicey food but it doesn't like me,I have trouble with acid reflux also.I can remember eating gator tail when I lived in florida but I don't remember much about it.That's been 20 years ago.I've tried alot of off the wall stuff just for the sake of trying it but I have pretty simple tastes.Give me some beef,taters and cornbread and I'm a pretty happy camper.
