for catfish use what you got. i like channels about 1and a half to 2 lbs.clean fish and wash with fresh cold water. place fillet in a bowl of butter milk and soak over mite in the frige. remove fish from bowl rinse with cold water. sperad fillets out on wax paper . salt and pepper to taste. sprinkle 4or 5 drops of louisiana hot sauce on 1 side of the fillets . roll in cornmeal . "RELEASE" in hot grease. remove fish from deep frier about 1 minute after they float to top . serve with home style french fries. cole slaw . sweet purple onion and ice tea.

that sounds good Slabmaster, but Sinker don't care fer that spicie stuff, he tought me to do catfish like he likes it. take the catfish chunks and dope them into a bowl with egg and milk mixture, coat good, them roll the chunk in fine crakker crumbs, set aside on a plate till you got a skillet full. I use a iron skillet, half full og vegie oil. get the grease good and hot, carefully drop the chunks of fish into the skillet, when it floats, turn if over till golden brown, I take it out and put it on a thick layer of paper towles too soak the extra grease off. serve with fried taters & onions. Sinker tells me those are good vittles.
